Nü Dry is our evolving interpretation of what a modern apple-focused dry cider can and should be. This blend will always be fermented fully dry with zero residual sugar but the mix of apples used to create the blend will change with the seasons just as nature intended.

21314 - super dry, super mellow.A blend of some of our favorite pressings from 2020’s harvest (GoldRush, CrimsonGold, Pink Lady) combined with the freshest tannic cider-specific apples harvested and pressed in September and October 2021 (Lots of French and British varietals, too many to list). Pale yellow & slightly hazy in appearance. Mellow acidity, rich creaminess from a fully malolactic fermentation on the 2020 pressings. Perfect for fish on a dish or some Sichuan prawns. 100 cases produced.

21335/22028/22047/22075/23132/23139 - Fresh as Hell. 75% organic gala apples and 25% tannic cider-specific varieties including but not limited to Yarlington Mill, Dabbinett, Harry Master’s Jersey, Nehou, Medaille D’Or. Both harvested and pressed in 2021, no malolactic fermentation or extended aging on lees. This is a bone dry, highly complex, appley hitter with big fruity notes of ripe apple, pear, and burnt sugar ALSO with tons of acid. Great to pair with a tidy cheese dish or some premium pork - damn, it’s delicious, lucky you.

22089/22103/22117/22131/22145/23081 - 25% organic gala apples, 75% Crimson Gold Crab Apples both harvested in 2021, pressed and fermented early 2022. Softer acidity, more floral character, not as grippy and intense as past batches, very friendly to casual sundrenched backyard gatherings, soft cheeses, cured meats, good tunes and excellent company.
